Homemade herb salt is very easy to make. It is best to use herbs with relatively low moisture content like sage and rosemary but there is room for experimentation here. If you use leafy herbs like basil it just takes longer to dry.

4 garlic cloves, coarsely chopped
60g coarse sea salt

Wash herbs and dry very well with paper towels.
In the food processor add garlic, herbs and salt and process until crumbly and the herbs are in bits and completely incorporated into the salt.
Line a large plate with greaseproof paper and spread thinly with the salt. Let dry for several days in a dry dust free and warm place until there is no moisture let in the salt and it feels dry when you rub it between two fingers. Fill in jars with lids and store.
