These delectable chocolate sweets have a core of marzipan. I like to dredge them in chopped pistachios but you can also use desiccated coconut or chocolate sprinkles.

250g plain chocolate
150g caster sugar
100g ground walnuts
3 tablespoons lemon juice
5 tablespoons rum
150g redcurrant jam
chopped unsalted pistachios

Melt the chocolate in a hot water bath, then let cool slightly.
In a bowl mix sugar and nuts. Add lemon juice and rum, then the chocolate and mix well. At the end stir in the jam. Set aside for about 1 hour so the flavours can meld.
Moisten your hands with cold water and shape hazelnut-size balls from the marzipan. Take pieces of the nut mix and flatten them between your palms. Cover the marzipan all around and shape into balls. Dredge in the chopped pistachios.
Place in a container with a lid and refrigerate. The balls taste best after 2 to 3 days.
