Beetroot and goats cheese salad

    Delicious, healthy lunch or side dish! Takes five minutes to make.

    Ingredients
    Serves: 4 

    • 3 to 4 large beetroot, steamed and peeled
    • 60g soft and crumbly goats cheese
    • For the dressing
    • 1 tablespoon honey
    • 1 tablespoon olive oil
    • 1 squeeze lemon juice
    • 1 pinch mustard powder (optional)
    • salt and pepper to taste

    Method

    1. Cut beetroot into1.25cm (1/2 in) slices, and place them around your serving plate.
    2. Wash hands (beetroot tend to turn everything red!)
    3. Then crumble goats cheese all over the beets.
    4. For the dressing, mix all the ingredients together, and spoon over beets and cheese.
