Sunrise Prosecco cocktail

    A colourful cocktail that will brighten up any brunch! It's made with Prosecco, Campari, pineapple juice, lime juice and orange juice.

    Serves: 12 

    • 1L pineapple juice
    • 275ml orange juice
    • 80ml lime juice
    • 1/4 fresh pineapple, sliced
    • 1/2 blood orange, sliced
    • 1/2 lime, sliced
    • 1 (750ml) bottle Prosecco or Champagne
    • 4 tablespoons Campari
    • pineapple and orange slices, for garnish (optional)

    1. Stir pineapple juice, orange juice and lime juice together in a large jug or punch bowl. Add pineapple, blood orange and lime slices. Cover; refrigerate 2 to 24 hours.
    2. To serve, pour 120ml juice mixture into each glass or champagne flute. Add 60ml Prosecco per serving. Slowly drizzle in 1 teaspoon Campari. Garnish with a fresh pineapple or orange slice, if desired.
