Double chocolate hazelnut cookies

    By combining dark chocolate and roasted hazelnuts, these chocolate chip cookies taste like Nutella®!

    Ingredients
    Makes: 24 cookies

    • 120g butter, at room temperature
    • 150g caster sugar
    • 1/4 teaspoon salt
    • 1 egg
    • 1 teaspoon vanilla extract
    • 50g 70% dark chocolate, melted
    • 1 tablespoon cocoa powder
    • 1/4 teaspoon instant espresso powder (optional)
    • 125g plain flour
    • 85g dark chocolate chips
    • 60g roasted hazelnuts, chopped
    • 30g roasted hazelnuts, finely ground

    Method

    1. Preheat oven to 170 C / Gas 3. Line 2 baking trays with parchment.
    2. Beat butter in a large bowl with an electric mixer until light and fluffy. Add sugar and salt; beat until combined. Beat in egg and vanilla extract until well-blended. Blend in melted chocolate, cocoa powder and espresso. Mix in flour gradually, until mixture is smooth. Fold in chocolate chips, chopped hazelnuts and ground hazelnuts.
    3. Drop heaped tablespoons of cookie dough 5cm apart on the baking trays. Use the back of a wet fork to flatten each cookie slightly, making a crisscross pattern.
    4. Bake in the preheated oven until set and edges start to darken, about 15 minutes. Let cool a few minutes before serving.
