Glace cherry loaf cake

    This is a quick and easy recipe for loaf cake with glace cherries. It's a family favourite of ours.

    • 100g butter or margarine
    • 225g self raising flour
    • 1 pinch salt
    • 100g caster sugar
    • 100 to 175g glace cherries, washed, dried and quartered
    • 1 egg
    • 1 teaspoon vanilla extract
    • 5 tablespoons milk

    1. Grease a loaf tin and line with baking parchment.
    2. Rub butter into flour and salt until it resembles bread crumbs. Stir in the sugar and cherries. Pour in the egg, milk and vanilla essence, mix together adding more milk if necessary to give it a dropping consistency. Put mixture into tin and level top.
    3. Bake in the oven at 180 C / Gas 4 until well risen and golden brown, about 1 hour 15 minutes.
    4. Turn out and cool on a wire rack.
