Low carb meatballs

    These low carb meatballs are made with Parmesan cheese and flaxseed instead of breadcrumbs; they'll keep you feel full for longer!

    Serves: 6 

    • 675g beef mince
    • 1 egg
    • 2 tablespoons grated Parmesan cheese
    • 1 tablespoon milled flaxseed
    • 1 teaspoon dried oregano
    • salt and ground black pepper to taste
    • 1 tablespoon olive oil
    • 1 (400g) tin tomato sauce

    1. Combine beef mince, egg, Parmesan cheese, flaxseed, oregano, salt and pepper in a bowl; mix until well combined. Roll mixture into golf ball-size meatballs.
    2. Heat olive oil in a large pan over medium heat. Add meatballs; cook until browned, about 5 minutes on each side. Pour tomato sauce over meatballs; simmer for 25 to 30 minutes.
