Savoury puff pastry Christmas tree

    Fun and easy to make, this savoury puff pastry Christmas tree is filled with a combination of creamy goat cheese and sun-dried tomato pesto. It's so much easier to make than it looks and is guaranteed to get lots of oohs and aahs from guests!

    Ingredients
    Serves: 8 

    • 2 tablespoons sun-dried tomato pesto or spread
    • 2 tablespoons spreadable goat cheese or cream cheese
    • 2 sheets puff pastry
    • 2 tablespoons finely grated Pecorino Romano cheese, divided
    • 1 egg, beaten
    • 1/2 teaspoon dried oregano

    1. Preheat the oven to 200 C / Gas 6. Line a baking tray with baking parchment.
    2. Combine the sun-dried tomato pesto or spread and spreadable goat cheese in a small bowl. Stir well and set aside.
    3. Place one sheet of puff pastry on the prepared baking tray. At the bottom of the sheet, cut a small tree trunk, about 2.5cm tall and wide in the centre of the sheet. Cut away the bottom of the sheet to the sides, then remove excess pastry. On either side, cut up towards the top-centre of the sheet to create a tree shape. Remove excess pastry on either side. The result should be a tree shape.
    4. Cover the pastry tree with a thin layer of the goat cheese mixture, spreading all the way to the sides. Sprinkle with 1 tablespoon of the grated Pecorino cheese.
    5. Roll up the second sheet of puff pastry and place on the tip of the tree; roll down towards the bottom. Lightly press down and carefully cut along the shape of the tree. Pull away excess pastry.
    6. Create branches by cutting horizontally across the tree, leaving a space lengthwise in the centre all the way from the trunk to the top tip of the tree. Cut so each branch is about 2cm wide.
    7. Twist the branches away from you, trying to get in 2 turns on the lower branches. Continue moving up the tree, twisting away from you as you go.
    8. Brush the entire tree with beaten egg. If desired, cut a star out of the excess pastry and place on top of the tree, then brush with egg. Sprinkle the entire tree with the remaining tablespoon of grated Pecorino cheese and the dried oregano.
    9. Bake in the preheated oven until a deep golden brown, about 20 minutes. Let cool on the tray slightly, then serve warm or at room temperature.

    Tips

    You can use cream cheese instead of spreadable goat cheese. You can also use basil pesto instead of sun-dried tomato pesto or spread.
