Chilli and lemongrass chicken

    Chicken is marinated in a mixture of ancho chilli, lemongrass, turmeric and soy sauce before being pan-fried to make this flavourful, spicy chicken dish. Serve with brown rice or a green salad.

    Serves: 4 

    • 1 large dried ancho chilli pepper, torn
    • 4 tablespoons soy sauce
    • 2 tablespoons dark brown sugar
    • 1 tablespoon lemongrass
    • 1/4 teaspoon ground turmeric
    • 1/4 teaspoon ground allspice
    • 450g chicken breast, thinly sliced

    1. Combine ancho chilli, soy sauce, brown sugar, lemon grass, turmeric and allspice together in a large resealable bag; add chicken and shake until coated. Refrigerate and marinate chicken for at least 1 hour.
    2. Transfer chicken to a pan and cook over medium heat until cooked through, about 10 minutes.
