Chicken is marinated in a mixture of ancho chilli, lemongrass, turmeric and soy sauce before being pan-fried to make this flavourful, spicy chicken dish. Serve with brown rice or a green salad.

1 large dried ancho chilli pepper, torn
4 tablespoons soy sauce
2 tablespoons dark brown sugar
1 tablespoon lemongrass
1/4 teaspoon ground turmeric
1/4 teaspoon ground allspice
450g chicken breast, thinly sliced

Combine ancho chilli, soy sauce, brown sugar, lemon grass, turmeric and allspice together in a large resealable bag; add chicken and shake until coated. Refrigerate and marinate chicken for at least 1 hour.
Transfer chicken to a pan and cook over medium heat until cooked through, about 10 minutes.
