Macaroni pie

    I am from the Caribbean island of Trinidad and I want to share my macaroni pie recipe with you. It is actually a baked pasta pie, it is very delicious and I consider it to be a comfort food. This recipe is passed on from generations in my family and I added a few new ingredients and gave it a little twist.

    Serves: 6 

    • 500g macaroni
    • 4 tablespoons water
    • 250ml full fat milk
    • 1 large onion, finely chopped
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper
    • 4 tablespoons tomato ketchup
    • 1 teaspoon mustard
    • 3 cloves garlic, finely chopped
    • 180g sweetcorn
    • 3 teaspoons salted butter
    • 1 egg
    • 350g Cheddar cheese, grated

    1. Cook macaroni following packet instructions.
    2. In a pot add 4 tablespoons water, milk, onion, salt, black pepper, ketchup, mustard, garlic and corn and let it cook for 1 minute. Add one third of the cheese and stir to melt. The sauce will become thick. Reduce the heat then add the butter.
    3. Add macaroni to the sauce and mix well, all the sauce should be absorbed into the pasta. Turn off the heat and set aside for 15 minutes to cool. Add the egg and mix well.
    4. Butter an ovenproof glass baking dish. Add some of the macaroni mixture to the dish, layer it with cheese, then add some more macaroni mixture and another layer of cheese and etc. The top of the pie should be covered in cheese.
    5. Preheat oven to 180 C / Gas 4. Bake pie for 30 minutes, at that point there should be no liquid left at the bottom. Bake until golden brown for another 15 minutes.
    6. Remove from oven, let cool then cut into slices and enjoy.


    This pie can be served with chicken, green salad, beans or whatever you prefer.
