Mango, coconut and walnut loaf cake

    This fruity, moist loaf cake is packed with chopped mango, desiccated coconut and walnuts.

    Ingredients
    Serves: 16 

    • 250g plain flour
    • 2 teaspoons bicarbonate of soda
    • 2 teaspoons ground cinnamon
    • 1/2 teaspoon salt
    • 3 eggs
    • 175g softened butter
    • 250g caster sugar
    • 1 teaspoon vanilla extract
    • 340g chopped mango
    • 40g desiccated coconut
    • 30g chopped walnuts

    Method

    1. Preheat oven to 180 C / Gas 4. Grease and flour 2 loaf tin.
    2. Sift flour, bicarbonate of soda, cinnamon and salt together in a large bowl; make a well in the centre.
    3. Whisk eggs, butter, sugar and vanilla extract together in a separate bowl. Fold mango, coconut and walnuts into the egg mixture; pour mixture into the well in the centre of the flour and mix well. Pour cake mixture into prepared loaf tins; let sit at room temperature for 20 minutes.
    4. Bake in the preheated oven until a skewer inserted into the centre comes out clean, about 1 hour. Cool in the tins for 10 minutes before removing to cool completely on a cooling rack.

    very easy to make, and so tasty! I don't have regular bread pans, just a set of four small ones, so I used those, and mini muffin tins. Also switched out the walnuts for pecans, and everything still worked out great!  -  16 Jun 2013  (Review from Allrecipes US | Canada)

    This is very addictive and hard to stop eating! I halved the recipe for just one loaf, but I kept the nuts the same, and used chopped pecans. Since I only did one loaf, mine was done in 45 minutes. Great for a nice breakfast treat  -  18 Aug 2013  (Review from Allrecipes US | Canada)

    Very good bread! I used a 16 ounce bag of frozen cubed mango and chopped it up -- gives just about 2 cups. I heat slices of the bread up in the microwave and it comes out tender and moist! I agree, very addictive!  -  23 Mar 2014  (Review from Allrecipes US | Canada)
