Oat, fruit and banana bars

    This recipe is made with a handful of ingredients and it is quick to make. Great as a breakfast snack and for a child's lunchbox.

    Ingredients
    Serves: 6 

    • 100g plain flour
    • 100g oats
    • 100g mixed fruit or sultanas, currants etc.
    • 50g butter, melted
    • 1 large banana, mashed
    • 2 tablespoons honey

    Method

    1. Preheat oven to 190 C / 170 C fan / Gas 5.
    2. In a large bowl, mix together the flour, oats and mixed fruit.
    3. Add the melted butter, mashed banana and honey. Combine the mixture thoroughly.
    4. Place the mixture in a square tin approx 20cm. Bake for 30 minutes, and cover with foil after half the baking time to stop the fruit from burning.
    5. Allow to cool and cut into bars/squares.
