Hunter style chicken

    You can make this chicken cacciatore, a classic Italian dish, as spicy as you like. If you prefer it mild, use less cayenne pepper.

    Serves: 4 

    • 4 skinless chicken breasts
    • 8 rashers smoky bacon
    • 2 shallots, minced
    • butter or oil
    • 300ml (1/2 pt) tomato juice or passata
    • 2 tablespoons Worcester sauce
    • 2 tablespoons honey
    • 1 teaspoon cayenne pepper, to taste
    • ground pepper
    • 1 tablespoon red wine vinegar
    • 225g strong cheese, grated

    1. Preheat oven to 180 C / Gas 4.
    2. Wrap each breast in 2 slices of bacon and place in a baking dish. Cook for 20 minutes.
    3. In a pan cook the shallots in butter until translucent. Add all the other ingredients except the cheese to the shallots and simmer until thickened.
    4. Add the juices from the chicken to sauce, then pour sauce over chicken. Add grated cheese to top and continue baking until cheese is melted and chicken juices run clear, about 25 minutes more.


    Great with lemon and olive oil roasted potato wedges.
