Chicken and broccoli bake with breadcrumb topping

    This bake with chicken breast, tinned cream of chicken soup and broccoli is delicious and easy and great for potlucks.

    Serves: 4 

    • 4 boneless chicken breasts or thighs, cubed
    • oil for frying
    • 500g broccoli, fresh or frozen
    • 1 (400g) tin cream of chicken soup
    • 1 (170g) can evaporated milk
    • breadcrumbs

    1. Fry chicken pieces in oil until browned on all sides. Cook broccoli in boiling water until it can be pierced with a knife, about 15 minutes. Drain.
    2. Combine chicken and broccoli in a large ovenproof dish. Mix chicken soup and evaporated milk and pour over chicken and broccoli.
    3. Preheat the oven to 180 C / Gas 4.
    4. Sprinkle breadcrumbs on top and bake in preheated oven until breadcrumbs are golden, about 25 minutes.
