Millie’s chocolate chip cookies

    These chocolate chip cookies are crispy on the outside with a gooey, chewy centre.

    Ingredients
    Makes: 1 tray

    • 125g butter, softened
    • 100g light brown soft sugar
    • 125g caster sugar
    • 1 egg, lightly beaten
    • 1 teaspoon vanilla extract
    • 225g self-raising flour
    • ½ teaspoon salt
    • 200g chocolate chips or mini Smarties®

    Method
    Prep:15min  ›  Cook:10min  ›  Ready in:25min 

    1. Preheat oven to 180 C / Gas 4.
    2. Cream butter with sugar and then add the stirred egg and vanilla.
    3. Sift in flour then add salt and chocolate chips. Roll into small equal size balls just about the size of a walnut.
    4. Place them onto parchment paper and make sure you leave them room to spread out.
    5. Bake in oven for 7 to 10 minutes, depending how soft or crispy you like them.
    6. Leave on baking tray for a few minutes to harden before moving to a cooling rack.

    Tip

    These store well if there’s any left but mine are gone well before then as my kids love them warm from the oven.
