Pineapple marshmallow salad with cheese

    This is a sweet dish that my American Grandma prepared for all family dinners, my family has served this dish for over 60 years. My aunt continues fixing it since Grandma's death in 1976 and I am now a proud torch-bearer. I have adjusted sugar and made this a gluten free recipe suited to any type of potluck meal.

    Ingredients
    Serves: 12 

    • 1 (435g) tin crushed pineapple in juice
    • 1 egg, beaten
    • 1 heaping tablespoon cornflour or arrowroot
    • 1 tablespoon stevia
    • 120g (4 oz) shredded Cheddar or other yellow cheese
    • 25g (1/2 cup) miniature marshmallows
    • chopped pecans

    Method

    1. Drain pineapple over a bowl to reserve liquid.
    2. Add egg, stevia, and cornflour to juice and whisk by hand.
    3. Heat in microwave for 3 minutes and stir every 30 to 45 seconds. Mixture will thicken. Do not leave it alone. Once mixture is desired thickness, remove from microwave. (This step can be completed on stove top burner. Again, do not leave it alone!)
    4. Add cheese and marshmallows immediately to hot mixture, mixing briskly. Once this is smooth add pineapple and fold it in until cheese and marshmallows are melted.
    5. Place in decorative dish and chill several hours. Serve with sprinkle of shredded cheese and spoonful of chopped pecans on top.
