Icelandic Christmas Cake

    This is a good everyday cake filled with sultanas and flavoured with lemon and cardamom. You'll want to make it more often than only once a year at Christmas!

    Serves: 15 

    • 200g caster sugar
    • 175g butter
    • 2 eggs
    • 300g plain flour
    • 2 teaspoons baking powder
    • 175ml milk
    • 75g sultanas
    • 1/2 teaspoon lemon extract
    • 1/2 teaspoon ground cardamom

    1. Preheat the oven to 180 C / Gas mark 4. Grease one 28cm loaf tin.
    2. Cream the butter and the sugar until light and fluffy. Add the eggs one at time beating well after each one. Stir in the milk, lemon and cardamom flavourings. Stir in the flour and the baking powder.
    3. Sift a little flour over the sultanas then stir them into the batter. Pour the batter into the greased bread tin and bake for 55 to 60 minutes.

    Used different ingredients. Wonderful cake! I was just in Iceland and had a cake very similar. Thanks for sharing! One tip: don't worry about trying to track down cardamom extract - just use 1/2 tsp cardamom instead.  -  18 Jul 2008


    Used different ingredients. I could not find cardamom flavouring and so used 1 tsp. cardamom instead. I have made this three times. Once according to the original recipe, once with an extra egg yolk, and once with candied orange peel instead of sultanas. All turned out really well.  -  18 Jul 2008


    Altered ingredient amounts. it's great! I love it! But I added apricot and walnuts and doubled the amount of sultanas, I wanted it to be rich.  -  18 Jul 2008
