Courgette stuffed with savoury tofu spread

    Courgette slices are baked in the oven then filled with a savoury tofu spread. An easy vegan starter.

    Serves: 4 

    • 2 courgettes, halved lengthwise
    • 3 teaspoons olive oil
    • 1 (75g) tub ready made savoury tofu spread
    • 2 teaspoons dried basil
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground black pepper
    • chives (optional)
    • 1 teaspoon fresh lemon juice

    1. Preheat oven to 190 C / Gas 5. Lightly brush 2 baking trays with olive oil.
    2. Cut off the stems and navels from the courgettes and cut lengthwise into 3mm slices. Place the slices on the trays and brush the tops lightly with olive oil.
    3. Bake in the preheated oven until soft but not browned, 15 to 20 minutes. Remove from the oven and allow to cool.
    4. Combine tofu spread, basil, salt and pepper to taste in a bowl. Using a wooden spoon beat until smooth.
    5. Place a teaspoonful of filling at the wider end of each courgette slice and roll up the slice. Fix rolls with chives (optional) and sprinkle with lemon juice.
