Easy slow cooker Thai chicken with basil

    This is a very easy slow cooker recipe for chicken with Thai chillies, basil and ginger - all you need to do is place the prepared ingredients in the slow cooker.

    Serves: 8 

    • 900g skinless, boneless chicken breasts, cubed
    • 1 red pepper, cut into strips
    • 4 tablespoons soy sauce
    • 2 tablespoons fish sauce
    • 3 fresh red Thai chilli peppers, finely chopped
    • 1 tablespoon freshly squeezed lime juice
    • 1 tablespoon rice vinegar
    • 1 tablespoon finely grated fresh ginger
    • 20g chopped Thai basil, or to taste
    • 1 pinch salt and freshly ground black pepper to taste

    1. Combine cubed chicken, red pepper strips, soy sauce, fish sauce, finely chopped Thai chilli peppers, lime juice, rice vinegar and ginger in a slow cooker.
    2. Cook on Low until chicken is tender, about 5 1/2 hours. Add chopped Thai basil and cook until wilted into the sauce, about 30 minutes more. Season with salt and pepper.
