Black bean tacos

    These tangy black bean and salsa verde tacos take only minutes to make and are flavourful and delicious!

    Serves: 4 

    • 1 tablespoon olive oil
    • 1 small onion, chopped
    • 1 (400g) tin black beans, rinsed and drained
    • 200g salsa verde (green salsa)
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon chilli powder
    • 1/2 teaspoon ground cumin
    • 6 taco shells
    • 60g grated Cheddar with chilli peppers (optional)
    • 1 tomato, diced
    • 1 avocado, sliced
    • 60g finely sliced lettuce

    1. Heat olive oil in a saucepan over medium-low heat; cook onion in hot oil until tender, about 5 minutes. Stir black beans, salsa, garlic powder, chilli powder and cumin with the onion. Reduce heat to low and cook the mixture at a simmer until it thickens, 5 to 10 minutes.
    2. Serve with taco shells, grated cheese, tomato, avocado and lettuce.

    This recipe was really easy to make, I used instead of onions some leeks that I had on hand and needed to use up. I also baked them for a bit to melt the cheese and served them with lettuce, tomatoes and sour cream on top. Yummy  -  27 Sep 2012  (Review from Allrecipes US | Canada)


    This was surprisingly quick and easy! I'm a novice in the kitchen and would use the term "cook" very lightly. This dish was very tasty with great flavor. I made 4 very healthy-sized tacos with toppings and have enough left over for 1 more taco for lunch. I also could only get the green salsa in a 24oz jar so I have plenty to make this at least 2 more times. Next time when I'm at a loss for something to make, I'll turn to this.
