Roasted cauliflower steaks

    Try these vegetarian, oven-roasted cauliflower 'steaks' seasoned with a simple lemon-garlic sauce.

    Serves: 4 

    • 1 large head cauliflower, sliced lengthwise through the core into 4 'steaks'
    • 4 tablespoons olive oil
    • 1 tablespoon fresh lemon juice
    • 2 cloves garlic, minced
    • 1 pinch crushed chilli flakes, or to taste
    • salt and ground black pepper to taste

    1. Preheat oven to 200 C / Gas 6. Line a baking tray with baking paper.
    2. Place cauliflower steaks on the prepared baking tray.
    3. Whisk olive oil, lemon juice, garlic, crushed chilli flakes, salt and black pepper together in a bowl. Brush 1/2 of the olive oil mixture over the tops of the cauliflower steaks.
    4. Roast cauliflower steaks in the preheated oven for 15 minutes. Gently turn over each steak and brush with remaining olive oil mixture. Continue roasting until tender and golden, 15 to 20 minutes more.

    After almost an hour in the oven, the cauliflower was still raw!! Has anyone done this in a frying pan with butter and spices? If so, how did it turn out? I wouldn't recommend this recipe to anyone!  -  20 Apr 2018
