Use a bird or chick biscuit cutter to make these soft, buttery biscuits for Easter. I used a few tiny drops of yellow, green and red food colouring in the icing to make pastel shades.

Ingredients
Makes: 24 biscuits
375g plain flour
225g butter, room temperature
175g caster sugar
2 eggs
For the icing
500g icing sugar, or as needed
lemon juice as needed
your favourite food colouring gels

Combine flour, butter, sugar and eggs and knead to a smooth dough. Chill for 1 hour in the fridge.
Preheat oven to 200 C / Gas 6. Line a baking tray with baking paper.
Roll out dough on a floured surface to 1/2cm thick. Cut out biscuits with cookie cutter. Place on baking tray and bake until lightly coloured, 12 to 15 minutes. Don't let them get too dark. Let cool.
Mix icing sugar with lemon juice to make a thick icing. Add food colouring as desired. Use to ice biscuits and let set.
