A simple, delicious savoury traybake made with chicken breasts, tomatoes, seasoned breadcrumbs and mozzarella cheese.

675g skinless, boneless chicken breasts, sliced into cubes
1 teaspoon salt
1 (400g) tin chopped tomatoes with juice
1 tablespoon minced garlic
175g stuffing mix or croutons
225g grated mozzarella cheese
1 tablespoon Italian herb seasoning

Preheat oven to 200 C / Gas 6. Lightly grease a baking dish.
Toss the cubed chicken with the salt in a large bowl. Place the chicken in a layer on the bottom of the baking dish. Stir together tomatoes, water, garlic and stuffing mix in a large bowl; set aside to soften. Sprinkle the cheese on top of the chicken, then sprinkle with the Italian seasoning. Spread the softened stuffing mixture on top.
Bake uncovered until the chicken is cooked through, about 30 minutes.
