Instant Pot® honey-soy chicken thighs with peppers

    This turned out to be one of our favourite meals so far using the Instant Pot®. Chicken thighs and green peppers are cooked with soy sauce, garlic, brown sugar and honey. Serve over rice for an easy weeknight dinner.

    Serves: 6 

    • 6 boneless chicken thighs
    • 2 green peppers, chopped
    • 1 large onion, chopped
    • 120ml soy sauce
    • 4 tablespoons brown sugar
    • 2 tablespoons honey
    • 3 cloves garlic, peeled
    • ground black pepper to taste

    Method

    1. Place chicken thighs in the Instant Pot® and cook for 10 minutes on the 'Manual' setting. Release pressure naturally according to manufacturer's instructions.
    2. Set the pot to 'Saute' and add green peppers, onion, soy sauce, brown sugar, honey, garlic and black pepper. Cook until most of the liquid has evaporated, the vegetables are soft and the chicken thighs are cooked through.
