Mixed green salad with sorrel

    Sorrel on its own is too sour to make a good salad but mixed with other fresh greens it becomes a tasty green spring salad.

    Ingredients
    Serves: 4 

    • For the dressing
    • 1 tablespoon creme fraiche
    • 1 tablespoon olive oil
    • salt and pepper
    • 1 pinch sugar
    • For the salad
    • 2 shallots, minced
    • 1 small head romaine lettuce
    • 1 handful young fresh sorrel leaves
    • 1 handful young fresh spinach leaves
    • 2 hard boiled eggs
    • croutons

    Method

    1. In a small bowl mix all the ingredients for the dressing. At shallots and marinate for 10 minutes.
    2. Wash and dry lettuce, sorrel and spinach. Tear into bite size pieces and gently toss with the dressing. Garnish with slices hard boiled eggs and croutons and serve at once.
