Savoury rhubarb and ginger jam

    This spiced rhubarb and ginger jam tastes delicious on top of goats cheese with crusty bread or crackers. The jam does not set as much as normal jam because is contains much less sugar.

    Ingredients
    Makes: 3 to 4 small jars

    • 500g rhubarb, sliced
    • 1 to 2 teaspoons freshly grated root ginger, to taste
    • 1 cinnamon stick
    • 3 tablespoons dried thyme
    • 2 teaspoons cracked black peppercorns
    • 1 to 2 shallots, minced
    • 1/2 teaspoon salt
    • 120g light brown soft sugar

    Method

    1. Add all ingredients to a saucepan and bring to the boil. Reduce the heat and simmer uncovered till thickened, about 30 minutes.
    2. Let cool to room temperature, remove the cinnamon stick and fill into small jars. Refrigerate until using.
