Pan fried chicken breast with rhubarb

    Rhubarb is delicious cooked in a savoury sauce with bacon, red onions and thyme and served with chicken.

    Serves: 4 

    • 500g chicken breasts
    • salt
    • pepper
    • 1 tablespoon oil
    • 1 tablespoon butter
    • 3 red onions, sliced thinly
    • 100g bacon, chopped
    • 400g rhubarb, diced
    • 2 tablespoons granulated sugar
    • 250ml apple juice
    • 2 bay leaves
    • 3 sprigs fresh thyme

    1. Rub chicken fillets with salt and pepper. Heat oil and butter in a frying pan and fry chicken on all sides till browned.
    2. Add bacon and onions and fry for a couple of minutes, stirring. Add rhubarb and sugar and let caramelise.
    3. Deglaze with apple juice. Add bay leaves and thyme and bring to the boil. Reduce heat and simmer for 5 minutes uncovered. Then cover and cook for 10 minutes more. Remove bay leaves and thyme and season with salt and pepper.
