Kiddies' Favourite Popcorn Cake

    Delicious -- children of all ages love this cake. It is best eaten the day it is made.

    Serves: 16 

    • 250g (9 oz) butter (reserve a good knob to grease the cake tin)
    • 32 marshmallows
    • 175g (6 oz) popped popcorn
    • 175g (6 oz) jelly diamonds
    • 150g (5 oz) peanuts
    • 200g (7 oz) Smarties

    1. Melt the butter and marshmallows in heavy saucepan over low heat. Stir often.
    2. Put popcorn in a large bowl and pour marshmallow mixture over top. Stir well to combine. Add the candy and nuts and mix together. Pack into a greased tube cake tin. Let set till cooled. Turn out onto a plate to serve. Cut in wedges.

    Used different ingredients. Really good! Didn't use jelly diamonds and used plain peanuts. True, it must be eaten within a couple of days or it gets gooey.  -  21 Jul 2008
