Slow cooker chicken, vegetable and rice soup

    This slow cooker soup made with chicken thighs and vegetables is a wonderful dish to come home to after a hard day at work.

    Ingredients
    Serves: 6 

    • 1L chicken stock
    • 450g skinless, boneless chicken thighs
    • 1 (400g) tin chopped tomatoes
    • 1 onion, chopped
    • 2 carrots, chopped
    • 120ml water
    • 2 stalks celery, chopped
    • 2 teaspoons minced garlic
    • 1 teaspoon dried basil leaves
    • 1/2 teaspoon salt
    • 1/2 teaspoon freshly ground black pepper
    • 1/2 teaspoon crushed chilli flakes (optional)
    • 100g frozen mixed vegetables
    • 45g uncooked long-grain rice

    Method

    1. Combine chicken stock, chicken thighs, chopped tomatoes, onion, carrots, water, celery, garlic, basil leaves, salt, pepper and chilli flakes in a slow cooker. Stir well and cover.
    2. Cook on Low until chicken is tender and flavours have combined, about 7 hours. Stir to break up chicken. Add frozen vegetables and rice. Cover and cook on High until rice is tender, about 1 hour.
