    About this recipe: Nothing beats a mug of this on a cold autumn day. A nice alternative to mulled wine.

    Ingredients
    Serves: 6 

    • 1.5L (2½ pints) apple juice
    • 4 tablespoons maple syrup
    • 2 cinnamon sticks
    • 6 whole cloves
    • 6 whole allspice berries
    • peel of 1 orange, cut into strips
    • peel of 1 lemon, cut into strips

    Method

    1. Pour the apple juice and maple syrup into a large stainless steel saucepan.
    2. Place the cinnamon sticks, cloves, allspice berries, orange peel and lemon peel in a muslin spice bag. Secure with kitchen string. Drop the spice bag into the juice mixture.
    3. Place the saucepan over medium heat for 5 to 10 minutes or until the mixture is very hot but not boiling.
    4. Remove from the heat. Discard the spice bag. Ladle the cider into big cups or mugs, adding a fresh cinnamon stick to each serving if desired.

    Used different ingredients. Instead of going through all the trouble to buy cinnamon sticks, I used: 1 tsp. Cinnamon, 1/4 tsp. nutmeg, 1/4 tsp. cloves and put that in a pot and stirred until it was hot. - 21 Jul 2008

    Made it healthier. Instead of using so much ingredients and using apple juice directly, I took 13 fresh apples, peeled, chopped and cooked them. Once they were half cooked I added 3-4 cups of water leaving a minute or 2 between adding each cup. I then added alot of cinnomon (3-4 table spoons, but you can add as much as you please really) and 1-2 table spoons suger, let it keep cooking for another 5 minutes and then sift it into another container. After this is done put the result that has drained into the new container back in the pan just used (after rinsing the pan) and bring it to a boil add alittle bit more cinnomon and a cup more of water to thin it out abit. Then pour it into a cup and drink up. The result should be a very thin apple purea and serve while hot it tastes nicer then. - 31 Aug 2010

    Everyone who is has tried this thinks it's wonderful! the citris turned it bitter after a few hours so be sure to remove the peels if you're letting it simmer for a long time. - 21 Jul 2008
