Denis's mixed vegetable soup

    A real wholesome winter warmer, easy to make and low cost using frozen veg.

    • 25ml olive oil
    • 25g butter
    • 1 large onion, chopped
    • 1/2 teaspoon garlic granules
    • 1/2 teaspoon celery salt
    • 1/4 teaspoon ground black pepper
    • 1/2 teaspoon ground turmeric
    • 4 cardamon pods, seeds only, finely crushed
    • 1/4 teaspoon ground fenugreek seeds (optional)
    • 1/2 teaspoon mixed herbs
    • 1 teaspoon sugar
    • 1 teaspoon soy sauce
    • 1/8 teaspoon hot chilli powder
    • 400 to 500ml chicken or veg stock
    • 500ml passata or tinned tomatoes, blended
    • 250 to 300g frozen mixed veg
    • 1 medium potato, chopped into 1.25cm (1/2 in) cubes
    • creme fraiche or cream (optional)

    1. Heat oil and butter. Add the onions and all the spices and herbs and cook on low heat for about 10 minutes, stirring, do not burn the onions.
    2. Add the stock and passata, bring to the boil then add the frozen veg and potato. Bring back to the boil for 10 minutes, then reduce heat and simmer until veg are soft, about 1 hour. Add creme fraiche or cream to taste and serve.


    You can put the soup into 4 or 5 small plastic containers and freeze until using.
