Avocado fudge

    A simple vegan recipe that uses just three ingredients; bananas, avocados and dark chocolate, which create a natural sweetness and smooth texture.

    • 250g dark chocolate
    • 2 avocados
    • 2 bananas

    1. Melt the chocolate slowly in a microwave. Do this in short bursts, stirring every 30 seconds.
    2. Blend the avocado and banana in a food processor.
    3. Mix in the melted chocolate.
    4. Line a baking tray with greaseproof paper and pour the mixture into it.
    5. Leave in the fridge until firm, around 2.5 hours. Alternatively, you can leave the mixture in the freezer for a shorter time.
    6. Cut into squares and store in the fridge until serving to ensure the fudge doesn’t melt.
