Tropical banana loaf cake

    Moist banana bread with the addition of pineapple and coconut. Delicious! I adapted several recipes to come up with this one.

    Serves: 10 

    • 120ml coconut oil, melted
    • 2 eggs, beaten
    • 1 teaspoon vanilla extract
    • 200g plain flour
    • 200g caster sugar
    • 1/2 teaspoon bicarbonate of soda
    • 1/2 teaspoon ground cinnamon
    • 1 pinch salt
    • 3 very ripe bananas, mashed
    • 120g crushed pineapple, drained
    • 40g toasted coconut flakes

    1. Preheat the oven to 180 C / Gas 4. Grease a small loaf tin.
    2. Combine coconut oil, eggs and vanilla extract in a large bowl; whisk well to combine. Add flour, sugar, bicarbonate of soda, cinnamon and salt. Stir well until combined. Fold in mashed bananas, pineapple and coconut; stir until just blended. Pour mixture evenly into the prepared loaf tin.
    3. Bake in the preheated oven until a skewer inserted into the centre comes out clean, about 1 hour. Cool in the tin for 10 minutes. Remove to a wire rack to cool completely.
