Vegan date bars

    These vegan no-cook coconut, nut and date bars will give you that extra bit of energy when you need it. Great for lunch boxes or to take on outdoor adventures! You can double the recipe if you need more than a few bars.

    Serves: 4 

    • 40g flaked almonds
    • 45g coconut flakes
    • 10 pitted dates
    • 1 teaspoon coconut oil
    • 40g cashews, or to taste

    Prep:10min  ›  Extra time:30min chilling  ›  Ready in:40min 

    1. Blend almonds and coconut in a food processor; add dates and pulse until combined. Add cashews and coconut oil; pulse until mixture is thick and sticks together. Transfer to a sheet of greaseproof paper; form into a square, folding sides of paper over the top. Refrigerate until solid, at least 30 minutes.
