    Traditional Welsh cakes cooked on a griddle or bakestone (a heavy, flat iron pan).

    Serves: 72 

    • 250g (9 oz) caster sugar
    • 275g (10 oz) butter
    • 1 teaspoon salt
    • 1 1/2 teaspoons baking powder
    • 2 eggs
    • 500g (1 1/4 lb) plain flour
    • 175g (6 oz) sultanas or currants

    1. Preheat a griddle or bakestone to moderate heat (165 to 175 C). Grease lightly.
    2. Beat sugar and butter together, adding salt and baking powder. Beat in eggs. Mix in 250g of flour and sultanas. Stir in remaining 250g flour. If too dry add a little milk; if too wet add a little flour.
    3. Roll out about 5mm thick and cut out rounds using a cutter. Roll out trimmings to use all the dough. Place rounds on hot griddle and brown on both sides.

    i know nothing about bakestones. Nothing. I thought it was a cookie that you fry on the stove. Wrongo. Its more like a funky pancake. Truth be known, i didn't care for it much.
