This recipe makes two simple sponge cakes, lightly flavoured with vanilla. Perfect for layering. This recipe does not call for butter but instead uses oil. You can easily make it dairy free by using a plant-based milk instead of cow's milk.
Preheat the oven to 180 C / Gas 4. Grease two 23 round cake tins.
Combine flour, sugar, baking powder and salt in a mixing bowl and mix well. Make a well in the centre and add in the milk, oil, vanilla and eggs. Mix just until cake mixture is smooth and well combined. Divide cake mixture evenly between prepared tins.
Bake cakes in the oven for 20 to 25 minutes, or until a skewer inserted in the centre comes out clean.
