    A classic dish from the American south. Collards, kale and cabbage are all cooked together with smoked turkey for a delicious tongue lashing.

    Ingredients
    Serves: 6 

    • 500g collards
    • 500g kale
    • 1 head cabbage, core removed
    • 1 onion, diced
    • 1 green pepper, diced
    • 3 garlic cloves, smashed and chopped
    • 2 smoked turkey legs or other smoked turkey parts
    • 4 tablespoons vinegar
    • salt and pepper

    Method

    1. Wash all the greens and cabbage and chop. Add in a large bowl with onion, pepper and garlic and place to the side.
    2. Wash smoked meats and place in a large pot with water. Fill pot one quarter with water. Bring to the boil and boil for 30 minutes.
    3. Add the vinegar to the meat, then add all the vegetables.
    4. Cover and cook until the vegetables are soft. Add more water if necessary during the cooking, stirring occasionally.
    5. Drizzle with olive oil and season with salt and pepper.

    Tip

    If you cannot find collard greens you can use spring greens instead.
