One pot sausage casserole

    A quick and easy casserole. The family will love this winter warmer. I was looking for a sausage casserole recipe that didn't have too many ingredients and did not need three hours in the oven. This casserole is cooked on the hob, in the same pan you use to brown the sausages.

    Serves: 4 

    • 6 to 8 good quality sausages
    • 1 tablespoon sunflower oil or other cooking oil
    • 2 vegetable stock cubes
    • 400ml hot water
    • 3 teaspoons mixed herbs
    • 1 teaspoon paprika powder
    • 3 tablespoons tomato puree
    • 1 large onion diced
    • 3 large carrots diced
    • 1 bell pepper sliced
    • 6 to 8 baby sweetcorns or 1 (200g) tin sweetcorn
    • black pepper

    1. In a large deep pan, brown sausages in cooking oil. Add onion and allow to soften.
    2. In a jug, mix stock cubes in 400 ml hot water. Add to pan with mixed herbs, paprika and tomato puree.
    3. Add carrots, pepper and baby sweetcorn. Add a twist of black pepper and stir contents of pan.
    4. Bring to the boil, then reduce heat to low. Cover and simmer for 30 minutes or more, up to 1 hour, adding more water as needed.


    Serve with mash, croquet or new potatoes.
