Sausage Casserole - Cooker Top

    A quick and easy casserole. The family will love this winter warmer. I was looking for a sausage casserole recipe that didn't have too many ingredients /need three hours in the oven... This casserole is cooked on the cooker top, in the same pan you use to brown the sausages... This is my own recipe...

    • 6-8 good quality sausages
    • 2 vegetable stock cubes
    • 3 teaspoons mixed herbs
    • 1 teaspoon paprika powder
    • 3 tablespoons tomato puree
    • 1 large onion diced
    • 3 large carrots diced
    • 1 bell pepper sliced
    • 6-8 baby sweetcorns or 1 tin of sweetcorn
    • Twist of black pepper
    • 1 tablespoon of sunflower oil / cooking oil


    1. In a large deep pan, brown sausages in cooking oil.
    2. Add onion, allow to soften.
    3. In a jug, mix stock cubes in 400 ml of hot water. Add to pan.
    4. Add mixed herbs
    5. Add paprika powder
    6. Add tomato puree
    7. Add carrots, pepper and baby sweetcorn
    8. Add twist of black pepper, stir contents of pan
    9. Bring to boil. then reduce heat to low
    10. Cover, leave for 30-60 mins


    You may need to add more water if on the stove for longer than 30 minutes. Serve with mash, croquet or new potatoes.
