This recipe was originally given to me by my mother-in-law who makes the best pavlova! I like how the meringue is so fluffy in the inside and crisp of the outside. It holds it shape very well!
Preheat oven to 150 C / Gas 2. Line a baking tray with baking paper.
Beat egg whites with an electric stand mixer or hand mixer until soft peaks form.
Add sugar, one tablespoon at a time; beat until it dissolves and mixture is stiff, thick and glossy. Beat in lemon juice and vanilla.
Spread onto tray to form a 23cm mounded circle. Bake for 30 minutes. Reduce oven to 120 C / Gas ½ and bake for 45 minutes. Turn the oven off, open the oven door and allow pavlova to cool completely in the oven.
Once cooled, top with whipped cream, passion fruit and berries.
