Tofu green tea ice cream

    This vegan tofu ice cream recipe has only five ingredients and can be ready in under an hour.

    Serves: 4 

    • 350g silken tofu, drained
    • 240ml unsweetened soya milk
    • 200g caster sugar, or to taste
    • 10g green tea powder (matcha)
    • 2 tablespoons coconut oil

    1. Process tofu in a blender or food processor until smooth; add soya milk, sugar, green tea powder and coconut oil. Blend until combined.
    2. Pour mixture into bowl of ice cream maker; freeze according to manufacturers directions.
