Cashew and date energy bites

    Easy, vegan, gluten-free snacks made with cashews, dates, ground cardamon and maca powder.

    Serves: 10 

    • 140g raw cashew nuts
    • 2 pinches sea salt
    • 8 Medjool dates, pitted
    • 3 tablespoons maca powder
    • 1 tablespoon ground cardamom
    • 2 teaspoons olive oil

    Prep:10min  ›  Extra time:30min  ›  Ready in:40min 

    1. Put cashews and salt in a food processor fitted with the S-blade; pulse until cashews are finely chopped but not a paste. Add dates, maca powder, ground cardamom and olive oil; blend until mixture is evenly combined and holds together.
    2. Shape mixture into 10 to 12 balls and refrigerate until firm, at least 30 minutes.

    Quite tasty... they have an earthy taste to them and are not overly sweet. If you are not a fan of cardamom... I am.. you might want to use a bit less  -  14 Nov 2015  (Review from Allrecipes US | Canada)
