Salmon baked in foil

    A large fillet of salmon seasoned with herbs and brown sugar is baked in foil in this easy recipe perfect for entertaining.

    • 120ml olive oil
    • 2 1/2 tablespoons fresh lemon juice, or more to taste
    • 5 cloves cloves garlic, minced or pressed through a garlic press
    • 1 tablespoon brown sugar
    • 1 teaspoon dried oregano
    • 1 teaspoon dried thyme
    • salt and freshly ground black pepper to taste
    • 1 teaspoon olive oil
    • 1.3kg salmon fillet
    • 1 tablespoon freshly chopped parsley
    • 1 lemon, sliced

    1. Preheat the oven to 190 C / Gas 5.
    2. Combine olive oil, lemon juice, garlic, brown sugar, oregano, thyme, salt and pepper in a bowl.
    3. Place a large piece of foil on a baking tray and brush with olive oil. Place salmon in the middle of the foil, skin-side down. Drizzle with olive oil mixture. Fold up the edges of the foil over the salmon to create a packet, making sure to seal the edges.
    4. Bake in the preheated oven until fish flakes easily with a fork, about 20 minutes. Garnish with fresh parsley and lemon slices.
