Sausage meatball bolognese

    Tasty alternative to traditional spag bol, made with pork sausages.

    Serves: 2 

    • 6 pork sausages
    • 1 bunch spring onions
    • large clove of garlic, chopped
    • 1 (400g) tin chopped tomatoes
    • 1/2 glass white wine
    • 1 large pinch Italian herbs or oregano
    • salt and pepper to taste
    • 200g spaghetti or other pasta
    • Parmesan cheese and parsley to garnish

    1. Skin the sausages and cut each into four pieces. Form all 24 pieces into balls.
    2. Quickly brown in a hot pan (I use a non stick wok). Remove them, leaving the fat in the pan.
    3. Chop the onions into small rings and lightly fry them with the chopped garlic.
    4. Add the tomatoes. Rinse the can with the wine then add that with the sausage balls, herbs and seasoning. Simmer until the sauce reduces and thickens, about 20 minutes.
    5. Serve with your favourite pasta, grate some Parmesan cheese on the top and sprinkle a little parsley to garnish.
