Pasta with coriander dill pesto

    This pesto is made with fresh coriander, dill and low fat quark. This pesto has quite a strong flavour so you don't need much. Cutting the quantities of herbs will tone it down.

    Serves: 2 

    • 100g pasta per person
    • 30g fresh coriander, less to taste
    • 10g fresh dill, less to taste
    • 2 large cloves garlic, chopped
    • 100g quark
    • 100ml cooled vegetable or chicken stock
    • grated Parmesan cheese

    1. Boil the pasta according to package directions.
    2. Put all the other ingredients apart from the Parmesan in a food processor and whiz till smooth.
    3. When pasta is cooked, put in a large bowl with the pesto and stir well. Top with Parmesan and serve.
