Mincemeat curry with peas

    Being a mum of 5 kids it's always a challenge getting all the kids to eat a proper meal without too much extra cooking. This dish always comes to my rescue when I need a quick dish to whip up for their hungry appetites to devour with rice. It doesn't take much preparation and in my opinion needs minimal effort to cook. Since this recipe is for children aged between 9 and 2 it's not very spicy. However the heat in this dish can be altered to taste. Happy cooking!

    Ingredients
    Serves: 6 

    • 3 tablespoons sunflower oil
    • 6 cloves garlic, minced
    • 1 thumb sized piece of root ginger, minced
    • 1 large bay leaf
    • 1 medium sized cinnamon stick
    • 2 medium sized onions, sliced
    • salt to taste
    • 2 fresh tomatoes, chopped
    • 500g mince meat
    • 1 teaspoon Madras curry powder
    • 1 teaspoon coriander powder
    • 1 teaspoon turmeric powder
    • 1/2 teaspoon extra hot chilli powder
    • 1 teaspoon Bolst's® mixed curry powder
    • 1 teaspoon cumin powder
    • 5 green chillies, slit in half (can be left whole)
    • 100g frozen peas
    • fresh coriander for garnishing

    Method

    1. Add the sunflower oil to the pot and throw in your minced garlic and ginger. Allow this to turn golden brown before adding in your bay leaf and cinnamon stick followed by your sliced onions.
    2. Cook the onions on medium high heat until they are golden in colour and add in the salt and chopped tomatoes.
    3. Simmer until the tomatoes have disintegrated into mush. Add in your minced meat and cook until the meat turns brown in colour.
    4. At this stage you want to add in all the powdered spices. Mix well and cook until the spices release their oils. You can add some water at this stage to prevent the spices from burning and sticking to the base of your own. Bring the heat down to medium and allow to cook for 10 to 15 minutes. Make sure to allow the spices to really cook down before adding in your peas. Cooking your spices with your meat will enhance the flavour of your dish. If you want a more saucy curry add some water.
    5. Once your minced meat has cooked through add in your green chillies and your frozen peas. Now cover again and allow to cook for another 5 minutes.
    6. Now garnish with coriander and it's ready to eat. Serve with basmati rice or some roti, naan or even chips.
