Pasta with nduja sausage and potatoes

    Nduja is a spicy, soft pork salumi from Calabria, Italy. Here is is added to a basil pesto to make a simple Italian regional pasta recipe with potatoes.

    Serves: 4 

    • 50g peeled almonds
    • 320g penne or rigatoni pasta
    • 30g nduja sausage
    • 40g sun dried tomatoes in oil, drained
    • 1 handful fresh basil leaves
    • 8 tablespoons extra virgin olive oil
    • 200g potatoes
    • salt

    1. Place in the mixer the peeled almonds and sun dried tomatoes drained from their oil. Add the nduja, basil leaves and olive oil. Mix well, then transfer the pesto to a large mixing bowl.
    2. Peel potatoes and cut them into chunks. Boil in a large pan of salted water. After 5 minutes add the pasta. Cook the pasta according to packet instructions.
    3. Drain the pasta and potatoes, leaving them a little bit wet. Pour quickly into the bowl with the pesto, add a few leaves of fresh basil, and mix well. Serve immediately.
