Janet's cinnamon cookies

    These cookies are crunchy on the outside, soft and chewy inside. They take only 30 minutes from start to finish.

    Ingredients
    Serves: 6 

    • 60g butter, softened
    • 150g caster sugar
    • 1 egg
    • 250g plain flour
    • 1 1/2 tablespoons ground cinnamon
    • 2 teaspoons baking powder
    • 1 pinch salt
    • 1 teaspoon vanilla extract
    • 240ml milk

    Method

    1. Preheat the oven to 180 C / Gas 4.
    2. In a bowl add butter and sugar. Mix till well incorporated. Ad your egg and continue mixing.
    3. Add your cinnamon and baking powder and mix. Add your vanilla extract and mix again.
    4. Add your flour and slowly mix it with the wet ingredients. Add milk little by little till it's a nice soft dough.
    5. Shape mixture into balls and place them on a baking tray lined with parchment.
    6. Bake in the preheated oven till golden brown, about 12 minutes.

    Tip

    Serve the cookies with milk or hot cocoa.
