Chicken with a twist


    Bored of the traditional roast and dishes? Roast chicken with veggies and no fuss! This is a Indian flavoured dish (this doesn’t mean spicy) you can adapt the recipe to your taste, however it’s the gravy which is amazing - you will never do gravy a different way after this!

    • Whole chicken
    • 2 cloves garlic chopped
    • Tsp ginger chopped
    • Tsp coriander (dry or fresh)
    • Tbsp Garam masala
    • 1tsp cumin
    • Juice of 1 lemon
    • 1tsp turmeric
    • 1tbs tomoto puree
    • 3 tbs natural yogurt
    • Gravy
    • 2 onions sliced
    • 2 cloves of Garlic
    • 3 tbs white wine vinegar
    • 3 tbsp Worcester sauce
    • 1tbs flour
    • 600ml chicken stock
    • 1 lemon boiled


    1. In a bowl combine the garlic, ginger, coriander, garam masala. Cumin, lemon juice and yogurt.
    2. Once mixed marinade the chicken making sure you get all the marinade all over the chicken.
    3. Put 1 lemon in a sauce pan and boil for 5mins then put in the chicken cavity.
    4. Chop 1 onion and place in a baking tray along with white wine vinegar, Worcester sauce, chicken stock, flour.
    5. Place chicken in the tray and cook in oven.
    6. Add more water or flour if required to the gravy when chicken is cooked.
    7. When the chicken is cooked take off the tray to rest and mix your gravy ( like I say add more water or flour if needed) then pour the gravy into a sieve and enjoy.
