Chicken with an Indian twist

    Bored of the traditional roast and dishes? This is an Indian flavoured roast chicken without fuss (Indian does not always mean spicy). You can adapt the recipe to your taste, however it’s the gravy which is amazing - you will never do gravy a different way after this.

    • 2 cloves garlic, minced
    • 1 teaspoon fresh root ginger, minced
    • 1 teaspoon ground coriander
    • 1 tablespoon garam masala
    • 1 teaspoon ground cumin
    • 1 teaspoon ground turmeric
    • 1 lemon, juiced
    • 3 tablespoons natural yogurt
    • 1 lemon
    • 1 whole chicken
    • 2 onions, sliced
    • 2 cloves garlic, minced
    • 3 tablespoons white wine vinegar
    • 3 tablespoons Worcester sauce
    • 600ml chicken stock
    • 1 tablespoon plain flour
    • 1 tablespoon tomato puree

    1. In a bowl combine the garlic, ginger, coriander, garam masala, cumin, turmeric, lemon juice and yogurt. Add to the chicken and make sure sure you get the marinade all over the chicken.
    2. Put the whole lemon in a saucepan with water and boil for 5 minutes, then put in the chicken cavity.
    3. Place onions and garlic in an ovenproof dish. In a bowl mix white wine vinegar, Worcester sauce, chicken stock, flour and tomato puree until combined. Pour in the baking dish.
    4. Place chicken in the baking dish.
    5. Preheat oven to 180 C / Gas 4.
    6. Roast chicken in the oven until the juices run clear, 1 1/2 hours.
    7. When the chicken is cooked take it out of the baking dish. Adjust the gravy by adding more water or more flour as needed. Strain the gravy through a sieve and enjoy.
