Cheesy jacket potatoes

    I think this was the first recipe I learnt!! There is no baking involved so these are much quicker. You boil the potatoes first, then make the filling, then pop them under the grill. Pure comfort food!

    Serves: 4 

    • 4 large baking potatoes
    • 4 tablespoons butter
    • 225g (8 oz) mature Cheddar cheese, grated
    • 1 small onion or 4 spring onions, finely diced
    • salt and pepper

    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Wash the potatoes, cut in half lengthwise but don't peel them. Place in a pan of boiling water and cook until medium soft.
    2. Drain and remove them from the water. Scoop out the "flesh", taking care not to split the skin. Put the skin to one side, don't throw away.
    3. Place the flesh into a mixing bowl, add the butter, sliced onion and half of the cheese. Mix well.
    4. Put the mixture into the skins, sprinkle the rest of the cheese on the top and place under the grill for 2 minutes or until cheese is melted and bubbling.
    5. Serve and enjoy. Hope you like them.

    Very nice, I had to use cheese sauce as I didn't have enough cheese, if you do this don't use all the cheese sauce as the filling becomes runny!!  -  13 Jul 2012
