Basil-spinach pesto

    This homemade pesto is a delicious mix of basil and spinach blended with extra-virgin olive oil, pine nuts, garlic and Parmesan cheese. Pine nuts can be replaced with pecans or walnuts. Each nut creates a slightly different flavour.

    • 20g fresh basil leaves
    • 20g fresh spinach leaves
    • 40g pine nuts
    • 2 cloves garlic, minced
    • 120ml extra-virgin olive oil
    • 20g freshly grated Parmesan cheese

    1. Combine basil, spinach and pine nuts in a food processor; blend until finely chopped, about 30 seconds. Add garlic and pulse 15 to 30 seconds. Add oil slowly while food processor is on. Stop to scrape sides with a rubber spatula as needed. Add Parmesan cheese and pulse until blended.
