This homemade pesto is a delicious mix of basil and spinach blended with extra-virgin olive oil, pine nuts, garlic and Parmesan cheese. Pine nuts can be replaced with pecans or walnuts. Each nut creates a slightly different flavour.

20g fresh basil leaves
20g fresh spinach leaves
40g pine nuts
2 cloves garlic, minced
120ml extra-virgin olive oil
20g freshly grated Parmesan cheese

Combine basil, spinach and pine nuts in a food processor; blend until finely chopped, about 30 seconds. Add garlic and pulse 15 to 30 seconds. Add oil slowly while food processor is on. Stop to scrape sides with a rubber spatula as needed. Add Parmesan cheese and pulse until blended.
